If you like “melt in your mouth” pork and crispy pork skin this is the recipe for you. If has taken me many years to perfect my Crackling Pork Roast recipe.
The first thing you will notice about this recipe is that it is fairly easy. The entire recipes only has a few ingredients. You will want to be sure to score the entire pork shoulder with an exacto knife as this will not only make the meat look cool with a diamond pattern but will allow the the fat underneath the skin to rise to the surface and drain.
The next part is also very important. We need to rub salt over the entire pork shoulder. Once the salt is applied to the meet the juices will be drawn to the surface. The salt will dissolve forming a brine that will be reabsorbed into the meat. (doesn’t that sound awesome)
Your guests will be amazed when it is time to serve this dish. The skin will be very flavorful and super crispy. The meat will be tender and falling off the roast. Everyone will be asking you for the recipes thinking these must be many ingredients to get this much flavor.

Ingredients
- 10 lbs Pork Shoulder
- 3 cloves Garlic
- 2 tbsp Salt
- 1 cup Citrus Marinade
Instructions
- Prepare 3 cloves of garlic (thinly slice garlic)
- Preheat oven to 275 degrees
- Use an exacto knife to score entire pork shoulder; use a diagonal pattern
- Rub salt over pork shoulder
- Use a sharp knife to make several holes in pork shoulder
- Insert garlic into holes
- Fill small jar with marinade and use shringe to inject pork shoulder with marinade
- Place pork shoulder in oven for 7 hours
- Increase oven temperature to 500 degrees and place pork shoulder back into over for 30 minutes
- All Done! Your family will love the crispy skin.
