I have been excited to share my Chicken with Sun Dried Tomato Cream Sauce recipe for while. The sauce when combined with the chicken will make you think you are in a gourmet restaurant.
My favorite part of this recipe is the sauce. The sauce is full of flavor but yet so easy to make. The whole dish does not take long to make.
You will want to start making the sauce first as the chicken cooks very quickly. Saute the shallots and garlic for 2 minutes over medium heat. You can then add the sub dried tomatoes and cream. At this point you house will have an amazing smell.
Cut the chicken in half and lightly flatten with a mallet. The chicken will cook in 3-4 minutes per side on medium heat.

Ingredients
- 2 tsp Salt
- 2 tsp Pepper
- 1 Shallot
- 3 cloves Garlic
- ÂĽ cup Sun Dried Tomatoes
- 1 bunch Parsley
- 1 cup Cream
- 1 lb Chicken
Instructions
- Dice Shallot and 3 cloves of garlic
- Making the Sauce… Coat pan with cooking oil
- Saute shallot and garlic for 2 minutes on medium heat
- Add 1/4 cup sun dried tomatoes and 1 cup of cream. Summer until slightly thickened.
- Finely chop parsley
- Add salt & pepper to taste and add parsley. The sauce in complete.
- Slick 1 pound of chicken in half with a sharp knife
- Lightly flatten chicken with mallet
- Coat chicken with cooking oil and salt & pepper to taste
- Coat pan with cooking oil and cook chicken 3-4 minutes per side on medium heat.
- Time to eat. Serve chicken on bed of greens or pasta.
