Pork Belly with Egg

Every Vietnamese household had their own recipe for Thit Kho, Caramelized Pork Belly with Egg.  I learned to make Caramelized Pork Belly with Egg by watching my mom who is a fantastic cook. 

My mom would make this dish with boneless skin on pork shank which is difficult to locate outside the Vietnamese community.  Most families make this dish with pork belly rather than the pork shank. 

I made this recipe using pork belly and I found that I like the fat to meat ratio gave the dish a more full bodied flavor.  Adding the egg after 45 minutes of cooking allows the meat to tenderize and prevent the eggs from toughening.  The idea Thit Kho would have tender pieces of pork and eggs which have absorbed the caramel meat juice. 

The sauce should be somewhat dark and slightly thick and not soupy.  I would make this Caramelized Pork Belly dish for my family once a month.  The caramel sauce is quite versatile and can be used to marinate foods or make other dishes.

Ingredients

  • 2 tbsp Soy Sauce
  • 1 can Coconut Soda
  • 12 Eggs
  • 2 tsp Sugar
  • 4 cloves Garlic
  • 2 lbs Pork Belly
  • 2 tbsp Caramel Sauce
  • 1 nob Ginger
  • 2 tsp Salt (total)
  • 1 Onion
  • 3 tbsp Fish Sauce (total)

Instructions

  1. Cut 2 lbs of pork belly into 1 inch cubes
  2. Add 1 tsp of salt, 2 tsp of sugar, 2 Tbsp of caramel sauce, and 1 Tbsp of fish sauce to pork belly. (mix together)
  3. Poke a small hole with a pin in each egg. This will ensure the eggs are easy to peel.
  4. Boil eggs for 1 minutes. Turn off stove; cover for 15 minutes.
  5. Peel eggs, coarsely chop onion, garlic, and ginger
  6. Cover bottom of pan and saute onion, garlic, and ginger
  7. Add pork belly to pot
  8. Add 2 Tbsp soy sauce, 1 tsp salt, 2 Tbsp fish sauce, 1 can of coconut soda, and remaining marinade
  9. Simmer over medium for 45 minutes
  10. Add eggs and simmer for another 45 minutes
  11. Time to serve
