BBQ Lemongrass Chicken

Typically this BBQ Lemongrass Chicken is made with Vietnamese Caramel Sauce and fish sauce.  One day while getting ready for my annual BBQ, I noticed that I ran out of my trusty always on hand caramel sauce.  Rather than whip up another batch of caramel sauce, I improvised and used the sweet soy sauce I had on hand and made some tweaks to my standard recipe. 

Since that fateful day, I decided to make this the new standard for my BBQ Lemongrass Chicken.  The sweet soy sauce was a little bit thicker and gave the chicken a more unami flavor and I didn’t need to add the fish sauce to the recipe.  The lemon juice adds a bit of acidity of the marinate and gives the chicken a bit more depth.

BBQ Chicken and chopping ShallotThis BBQ Lemongrass Chicken recipe is fairly simple and easy to whip up, but be sure to allow time for the chicken to marinate and the flavors to develop.

Let’s get started.  First we need to chop our shallot, 4 cloves of garlic, and squeeze a half lemon into a blender.  You can find the Magic Bullet (blender) I use on Amazon.  This blender is perfect for small blending needs.

Next we need to place 2 Tbsp of Lemongrass, 2 Tbsp of Cooking Oil, and 2 Tbsp of Sweet Soy Sauce in the blender.  Now we can blend all our ingredients together.

BBQ Chicken On The GrillTake a plastic zip lock bag and place your marinade and your chicken drumsticks in the bag.  I do about 18 drumsticks at a time.

We are now ready to grill the chicken.  After warming up the grill to medium heat place the chicken on the grill for 8 minutes per side.  Remove the chicken from the grill, let cool, and serve with your favorite dipping sauce and side dish.

Ingredients

  • 2 tbsp Lemongrass
  • 2 tbsp Sweet Soy Sauce
  • 2 tbsp Cooking Oil
  • 18 Chicken Drumsticks
  • 1 Shallot
  • ½ Lemon
  • 4 cloves of Garlic

Instructions

  1. Chop shallot, 4 cloves of garlic, and squeeze a half lemon into blender
  2. Place 2 Tbsp of lemongrass, 2 Tbsp cooking oil, and 2 Tbsp of sweet soy sauce into blender
  3. Blend all ingredients together
  4. Place half the marinade we made into a resealable bag
  5. Place all 18 chicken drumsticks into bag along with remaining marinade
  6. Place bag in refrigerator for at least 4 hours
  7. Place chicken on grill for appx. 8 minutes each side (medium heat)
  8. Remove chicken from grill and it’s time to serve
