Banana Bread

Banana Bread is one of those recipes I make at least once a month. For one reason my kids are always asking for it and it is just awesome comfort food. I have been waiting to share this Banana Bread recipe for a long time.

“Your family will come running when they smell this Banana Bread.”

Each time I make this recipe I make slight adjustments. I think I finally perfected this one. Buy your bananas in advance as it is important to have ripe bananas.

Banana Bread Mixing With EggsThis recipe is fairly easy and making Banana Bread with my kids is really a fun way to spend a Saturday afternoon. Adding in the cranberries really makes this recipe a treat.

Let’s preheat the oven to 350 degrees. Now we need to thoroughly mix 2 sticks of butter. We can now add 2 1/2 cups of sugar. (mix in half at a time) Now add 1 1/2 tsp of salt along with 4 eggs. (add one egg at a time)

Next we want to sift 4 cups of flour and 2 tsp of baking soda. We can now smash 2 large ripe bananas in a small bowl. Let’s add the flour, 1 cup of buttermilk, and our bananas a little at a time. Fold in the cranberries and add 1 Tbsp of vanilla.

Banana Bread mixing with CranberriesSpray 2 pans with non-stick spray and add the batter. Place both pans into the over for 65 minutes. That’s it! Time to call the family to enjoy some warm Banana Bread.

Ingredients

  • 2 ½ cups Sugar
  • 4 cups Flour
  • 1 cup Buttermilk
  • 1 tbsp Vanilla
  • 4 Eggs
  • 8 oz Dried Cranberries
  • 2 tsp Baking Soda
  • 1 ½ Salt
  • 2 sticks Butter
  • 2 Ripe Bananas

Instructions

  1. Add 2 sticks of butter to a bowl
  2. Mix butter along with 2 1/2 cups of sugar
  3. Add 1 1/2 tsp of salt
  4. Continue mixing and add 4 eggs (one at a time)
  5. Sift 4 cups of flour and 2 tsp of baking soda
  6. Smash 2 ripe bananas
  7. Prepare 1 cup of buttermilk
  8. Fold in one package of cranberries
  9. Add 1 Tbsp of vanilla (optional)
  10. Spray pans with non-stick cooking spray
  11. Cook for 65 minutes at 350 degrees
